All of Hodo's tofu is
made fresh daily at The Beanery in Oakland. We start with the finest American
heritage soybeans, hand-selected by our Tofu Master. We use only whole
beans - never soy extract or isolates - and craft our tofu in the
traditional Chinese way: no preservatives and high in calcium content.
We make tofu for a wide variety of culinary uses. A silken custard. Pressed
blocks that are soft, firm or extra firm. Tofu that is braised with
flavorful marinades and flash-fried into fluffy cubes. We even make a
dark tofu from a special varietal of black soybeans. Eaten fresh, each
is a revelation.
